TARTIFLETTE

BACON WITH POTATOES, ONIONS & REBLOCHON CHEESE MELTED ON TOP

The main attraction.

Tartiflette as I like to explain to fellow Canadians is like the higher-end, WAY more expensive version of a poutine, which is Quebec’s national dish (fries covered in cheese curds and gravy).

This is what goes into a Tartiflette:

Bacon chopped, fried and deglazed with Pouilly Fuisse

Deglazing the bacon with this wine so that it doesn’t stay greasy

..then having the potatoes baked so that when they’re covered in cheese they still have a bit of a texture:

And lastly, the block of Reblochon cheese goes on top to melt into delicious ooey-gooey-ness:

Would you believe this is the LOW fat version? There’s barely any melted cheese on there (BF is still going strong on not eating as much cheese and meat as before).

Our normal Tartiflettes before he changed into becoming more vegan-y look like this.

There are bacon and potatoes hidden underneath that bucket of melted cheese… somewhere.

Seeing as going vegan doesn’t really do anything for my stomach (I see and feel no benefit in eating less cheese or meat, unlike BF who has a sensitive stomach), I kind of wistfully miss the good ol’ days.

It was so rich, that dessert was a nap.
